Soak your nuts and Grains!

Soaking nuts and grains has been in a bit of a conversation around me lately. What is it? We hear that its better for us but why? How do we do it? Are we meant to dehydrate them after? So many questions and its a bit silly because grains have been soaked for so many years in so many cultures and the reason people are not doing it so much now is because our culture has become lazy. We want things quick and we don't want to take hours, days, weeks preparing food. But guess what? Thats what we are supposed to do! In so many cultures, traditionally food was prepared with so much more time and love. A good sourdough bread should take at least 2 weeks to make. Grains were soaked, sprouted and fermented. This was all done so we could digest everything really well and our bodies loved it. Now, bread takes half an hour, rice takes 15 minutes and nuts we eat straight from the bag. We are eating nuts from god knows where, packaged in god knows where, with who knows who's finger prints all over them and probably covered in mould we cant even see. Yes I know, sounds disgusting when you think about it like that doesn't it? Eating healthy, clean food is going to take more time, I understand that but what we want is to put our health first and if that means taking a little bit more time to prepare things I think we should just do it! Lets take it back to old school living and eating when people were healthy!

The facts:
  • Nuts and seeds are great foods; they are rich is good fats and proteins although nuts contain enzyme inhibitors so thats why many cultures soak them before they are eaten. Soaking them; activates them, wakes them up, brings them to more of a live food state and absorption of nutrients, minerals and proteins is much higher. 
  • Most grains benefit from soaking. Grains, dried beans, lentils and peas all contain phytic acid; a mineral inhibitor and enzyme inhibitors in the outer layer which interferes with absorption of many minerals, especially calcium, magnesium and zinc. Soaking grains reduces the phytic acid. If we can reduce it in our food then we will allow our bodies to absorb more minerals from our food. Iron is a great example, if we remove phytic acid from grains, iron absorption will improve by 3 times in rice and in wheat almost 12 times. Pretty amazing!
  • In saying all this; it is pretty impossible to remove phytic acid completely from our food in our own kitchens but soaking can do alot and is a good start to reduce it quite substantially.
  • We shouldn't just soak grains but we should ferment them too. Fermenting grains creates good bacteria that starts to break down the phytic acids and enzyme inhibitors, creating lactic acid as a by-product. The Bacteria also breaks down gluten (gluten is very hard to digest). Due to this it also creates more tolerance to people allergic to wheat. 
  • Soaking is best over night; 6-12 hours.
  • Always rinse your nuts and grains really well after soaking them, before eating them or cooking them!!!
  • If you prepare your nuts and grains well, you may double your absorption of the minerals in them. You may even absorb more than that.
SO here's how to:

Soak grains:
  1. In a large bowl put your grains, beans, lentils or peas; cover with water and mix in a table spoon of raw apple cider vinegar or organic cultured yogurt to assist in fermentation. Soak each kind separately.
  2. Cover and let to soak and ferment over night at room temperature.
  3. In the morning; rinse your grains thoroughly under running water and serve or cook as you like.
  4. ENJOY!
Activate nuts:

  1. Place nuts or seeds in a large bowl and cover with water. Soak each kind separately. 
  2. Cover and let soak over night at room temperature.
  3. After soaking, the nuts will look nice and puffy and may even start to show signs of sprouting. 
  4. Rinse the nuts thoroughly under running water.
  5. ENJOY!
  6. If you have left overs as I always do as I make a big batch to save time later; either dehydrate them or put them in air tight containers and freeze them until you need them. 
Its not the end of the world if you cant soak everything but if you do, your children and your family will get more goodness out of them!

RECIPE: Tasty Tacos... Recipe by Amber Ware


This is a super yummy, super easy mexican meal for you to try totally GUILT FREE from my amazing friend Amber Ware. Amber and I met at pre-natal yoga while we were pregnant. Their was a little bit of small talk in between our meditation and salute to the suns but we really hit it off when our babies were born... only 1 day apart. From the kiddies being 6 weeks old we have met up every thursday for beach front power walks, homemade post-natal exercise classes, park play dates and recipe swap sessions. We have chatted for hours on end, sharing the very first tooth, the first steps, listening to the terrible night we may of had before and giving each other the support to power on to a new day. We have watched each others pride and joys grow into little toddlers as they become the best of friends. Archer and Pia cant get enough of each other, its so beautiful to watch! I'm so lucky to have met such a wonderfully amazing friend and support while entering into the world of motherhood. 
Amber has always been a super healthy outgoing athlete and is a very creative keen cook. With this, she has also found the passion for real food since having little Archer and is currently going through a family journey of self-healing... The results are absolutely amazing and I'm so excited for them. Here is one of her meals that we love love love!

Tasty Taco Tuesdays... Recipe by Amber Ware


When I was training for a triathlon a few years back, I had a fabulous group of training buddies and every Tuesday we all went back to one team members house for Tacos.  Watching our weight and conscious of what we put in our mouths - due to training and the fear of a looming race, these tacos are wallet friendly, really tasty and really good for you to boot!  Proves that you can get the mexican kick without the junky, chemical laden bits too!  To this day, this recipe is a standard in our household!

Taco meat:
500 gms of turkey mince (or can be substituted for Tofu easily and tastes just as good)
2 tbsp tomato paste
1 bottle of passata
400 grams of organic red kidney bean or chick peas
ground paprika
ground cumin 
ground coriander
chilli flakes or powder
ground ginger  - a good shake of each till you have the strength of taco flavour you like

Sides:
Guacamole
1 - 2 avocados
2 tbsp natural yoghurt
Fresh coriander, chopped
1/2 punnet of cherry toms, diced
Lemon juice to taste

Salsa
1/2 punnet of cherry toms, diced
1/2 red onion, finely diced
1 cucumber, diced
Olive oil to taste
Raw apple cider vinegar to taste
Lemon juice to taste
Tacos shells
organic baby Cos lettuce leaves, washed

I love coconut water! Everyone should love coconut water! Coconut water is the most amazingly refreshing sweet hydrating drink you will ever come across. REVIEW: SCHKINNY MANNINY FRUIT AND VEGETABLE JUICE DETOX



This week I undertook the Schkinny Maninny fruit and vegetable juice detox. The idea of a juice cleanse is to give the body a break of having to process hard digesting foods and just give your body a hit of nutrients. As I have mentioned previously, drinking a fresh vegetable juice is sending nutrients into your body on a super high way. The body doesnt have to digest all the fibres and its a great shot to the body when its feeling a little low and it really gives your digestive organs a rest.   • Schkinny Maninny are a Sydney based company that bring the juice cleanse to you. That was what impressed me the most. I have done my own juice cleanses before and for the amount of juice that you drink you are either cutting up vegetables, juicing or cleaning up most of the day. To do a juice cleanse for 3 days and have no washing up = AMAZING!
  • On the Schkinny maninny program they deliver your fresh juices cold in an esky every morning. This means the juices are fresh.
  • You recieve 6 juices and soups a day to consume so you definitely dont go hungry. When people think juice cleanse, alot of people freak out and think that they will be starving, well if so this is the cleanse for you because by the end of the day I couldnt even finish the last juice.
  • The juices are RAW! All juices that are in the supermarket are pasterised just like milk, they flash heat it to kill any bacteria but this also creates chemical imbalances as well as stripping nutrients making alot of juices toxic when they hit the shelves. So dont fear with these, the Schkinny maninny juices are all raw straight from the juicer.
  • Each juice or soup has their own specific nutrient health properties and it is listed on the bottle. I loved that as I was drinking the juices I could read what the benefits were, it makes you feel even more determined to get to the end.
  • Another thing I was impressed by was the amount of fibre in the juices and soup. Our bodies need fibre so although they are juices and soups they still include that little bit of fibre to help our bodies to keep going to the toilet.
  • With your morning delivery you also get some seeds to chew on during the day, this is just to get you chewing a little and keep yor digestion working properly. 
  • Each esky has a card in it which gives you your menu and info for the day. Its great as it gives you insights as to how you will feel through out the day as well as some inspiration. 
  • You also get daily emails to keep you going. I loved that part!

  1. Schkinny Leap Frog - a refreshing green smoothie of spinach, parsley, kiwi, apple and cucumber
  2. Schkinny Vego Mego - a zesty combination of beetroot, spinach, lemon, celery and ginger

Ok so lets get to how I felt -


Day 1
Busy day... I started the day with my apple cidar vinigar and my daily inspiration nutritional card with the heading; "Hunger is 90% in the mind". I decided to have that mind set for the next three days and if food came into m mind I would just accept that its not an optin and move onto the next juice or keep busy. So by the time I had finished giving little P her brekky and get her ready I started my first juice at 9am... YUM! And I mean yum yum yum! It was a very green juice of kiwi, apple, spinach, parsley, and wheat grass, so it was a nice hit of chlorphyl and energy. I then went for a great walk with my lovely friend and naturopath, Layla.
After our walk I headed home back to work and got into my second juice, also very impressed with the taste. This one was a carrot, ginger, and a few other yummies.
I wasnt hungry at all, the juices were so big. They make the juices huge so you wont go hungry.
I am usually an eater. I love food so I was really suprised that I wasn't hungry. I had energy, life was good.
I heated my soup up for dinner = DELICOUS! Cream of Spinach.
I then headed of to my dance class like usual and then home straight to bed. 

Day 2
ARHHHHHHHH a headache. When cleansing you can go through many side effects; like diareah, nausea, headaches, cold/flu like symptoms,  etc. I seriously thought I had missed the side affects as I am mostly healthy anyway, being off gluten, dairy, and coffee for over a month. Well, turns out I was coming off something because the head ache was there all day, bad. Just quietly I think I was coming off cocao, oh man I love the stuff so much and I seem to fit it into something everyday... well no more! The headache was a wake up call. The best thing to do when you are feeling symptoms on a detox is to just embrase them and get excited that its ridding the bad from your body and doing good! The day was spent resting between phone calls, emails, a business meeting and a bit of tv ... It was a rest day. Around 1pm I started thinking about food, it is the time when my little toddler is in bed and I have a couple of hours to myself and thats usually when I relax, have lunch and get some work done... I tried to quickly change my train of thought and get onto the next job I had to do. For the first time in a long time I needed to go to bed early so I did.


Day 3
Headache still there slightly and the flu... So another day of rest. Ohhhhh I guess when you rest for a minute everything falls apart and the cleansing has obviously cleansed some of the bugs that I was holding back right out of me. I enjoyed my juices but couldnt drink all of each one. I just had half of each one although by the time it got to dinner I really wanted something to eat. Really really bad, but I didnt feel like a juice I just wanted a big peice of fish or something I could chew on but I reminded myself that I would have a nice brekky waiting for me when I woke up. So instead of thinking about food, I went to bed early again. Sleep is good!


Now - post cleanse.
I LOST 1.5kgs! WOW! This was quite amazing as I didnt feel any lighter and on the second day I had no hope that I would lose any weight during this as I was drinking sooooooooo much juice but when I weighed myself post cleanse I am very happy to announce 1.5kgs gone! Lets hope it's stays off! I am feeling really good that I achieved three days of juices and am very proud that I made it to the end. Its not all easy, even if their is lots of juice around, you may not want to drink one more sip of the stuff at times but to have completed the program I feel very fulfilled that I can do it and that feels great and more confidence into other avenues of life.


I think this cleanse is great for people on the go and working people that want to jump start their health. 3-5 days is not long and you can see the finish line so close as soon as you start. Its a great cleanse for someone that has never done anything like it before as there is enough juice that you are getting the calories you need for the day and the nutrients! Everything is done for you and there is no excuses, the juices are delivered fresh to your door before you even wake up. Its pretty amazing!

Poaching the perfect egg

Eggs are so amazingly good for you! They are high it protein and they are high is very important fats! They are the perfect snack or meal for your baby or child. They are fantastic and we love them in our house. Eggs though can be cooked in many different ways  and most of the time people eat them fried. NOOOOOOOOOOOO!!!! I tell you, don't do it! Frying food creates so many chemicals that make food extremely hard to digest and may be carcinogenic. Scrambling is also not good as it is breaking up the good fats and when the yolk is cooked to hard then it is a lot harder for our bodies to digest. Another mistake people make when eating eggs is removing the yolk, people are led to believe that this is a better way to eat them as the yolk is highly fattening. Well yes, it is high it fats but good fats. We need fat for development, to digest food and many more important health reasons. Eggs were created with a yolk for a reason. Our bodies need both parts of the egg to digest it properly so eat the whole thing and enjoy it, lets face it... the runny yolk is the best bit!!!! So lets keep it simple eat eggs boiled or poached and enjoy it with the yolk runny! Boiled eggs are the easy ones but poached can get a bit tricky so here is the trick... Heres how to poach the perfect egg. ENJOY!

Ingredients
Water 5 cm high in saucepan
1 Tbls Apple cider vinegar

Method

  1. Place water and vinegar in a shallow pot or deep pan.
  2. Bring water to just below boiling. Don't let it boil or things will get messy.
  3. Break egg as close to water as possible
  4. Make sure it doesn't stick to bottom of the pan and water is surrounding.
  5. Cook approx. 5 minutes. You want yoke to be soft and whites to be firm.
  6. Strain and put on some paper towel to absorb more water.


Serve! ENJOY!

Recipe: Raw nutty choc


Who said you couldn't make your own guilt-free raw organic chocolate? This is the biggest treat... so delicious! ENJOY!



Ingredients


Method

  1. Melt coconut oil and cocao butter in a bowl sitting on top of pot with some water on very low heat, Stir continuously.
  2. Once liquified place the oils into the food processor with dates and cocao powder.
  3. Wizz until all combined.
  4. On a tray lined with baking paper sprinkle the chopped nuts all over.
  5. Now pour the choc date mixture on top. Press into tray to make flat.
  6. Place tray in the freezer for at least half an hour and bring out to serve.
  7. ENJOY!!!!!!!!!

TOXIC FREE FIND - ZUII ORGANIC

Make up is now known to be a total cocktail of chemicals for the body to absorb. It is something that is meant to make you look beautiful but if you are using a chemical based brand then you will be doing detrimental damage to your skin and to your body. Click here to find out more. In saying this, make up has been a hard switch for me to make... Having dry, sensitive skin and freckles I like to wear a heavy foundation with a thick coverage. While slowly attempting to make the switch to the natural side I was sent a bundle of Zuii Certified Organic Makeup. All the natural make up that you hear about  on the market at the moment is mineral and I didn't realise that there was anything else, especially such a thing as a make up that was made out of flower petals. Doesn't that just make you feel beautiful already? I was excited.

My experience -

  • CERTIFIED ORGANIC FLORA LIQUID FOUNDATION
  •  - This was a bit light in skin tone colour for me so I gave it to my sister, Asha, as she has fairer skin. She loves it. It has become a staple in her morning make up routine. She says it smells amazing and it is nice because its light weight. It a great foundation for someone wanting a natural look without heavy coverage. 
      
  • CERTIFIED ORGANIC FLORA FOUNDATION
  •  - The dry skin dilema. I tried wearing this powder for a few days but unfortunately due to having such dry skin; powder sits too heavy on my skin and I look a bit light a powder puff although my sister has a more oily complexion and it looks fantastic on her. It has great coverage and you can layer it on the more coverage that you want. I also had a few other older women try this and they absolutely loved it, great coverage and long lasting.
  • CERTIFIED ORGANIC FLORA BLUSH
  •  - I love this blush! I have actually never been a blush girl as I have quite rosy cheeks any way, but this blush is great. I tried the colour peach and its got more of a bronzing tone rather than a pink which I love. I am using this most days now, I even use it lightly all over my face as a bronzer too.
  • CERTIFIED ORGANIC FLORA EYESHADOW
  •  - YAY! Zuii have the most amazing range of colours! They call themselves the MAC of the natural make up world and with these eyeshadows they definitely step up to the mark. They are long lasting and very deap in colour. This is because they are natural colours they are concentrated which makes them alot deaper and sharper. They are so easy to apply and last all day. I have been using the black diamond colour on the outside crease on my eye lids to highlight my eyes and I love it. I am looking forward to purchasing some more colours soon to add to my collection!
  • CERTIFIED ORGANIC FLORA MASCARA
  •  - I honestly had reserves when it comes to mascara and being natural. I always thought how could it work? How could much colour be highlighted, etc. Well don't be fooled with this one... IT IS WOW! The first time I put it on it went on so well, so dark and pumps the eyelashes up like I couldn't believe. I actually think it looks better than the chemical filled long lasting eyelash pumping mascaras that are on the market. I was truly surprised and I am definitely a convert! 
  • CERTIFIED ORGANIC FLORA LIP TINT
  •  - This lip tint is perfect for everyday gloss. It has a light tint and a fab glow. Remember when you are wearing anything on your lips; you are eating it as you breath, eat and talk so don't use anything with chemicals. 
  • CERTIFIED ORGANIC FLORA LIPSTICK
  •  - I am just beginning to become a lipstick girl and I have been wearing the Zuii organics shear peach shade. It is devine. Lipstick makes you feel absolutely glamorous and this one is worth a try! It goes on very smooth and has a beautiful shimmer! I love it!

I have had a great experience using Zuii organic cosmetics. They have been amazing for everyday wear as well as glamming up for an event. I have had a lot of events to attend lately and the Zuii organics eyeshadow, mascara and lipstick have been my side kicks. 7 tips to PARTYING on a detox!

If you ask anyone that knows anything about health then they will tell you that you can't party while your detoxing. To detox your body and mind you must give your body sleep, rest, and lots of down time. Its true, your body cant cleanse properly if you are out all night dancing on tables. You need to give your body the best envirnment but a trip to a deserted island is not alway possible and there is always something to attend especially when you have children. During my health kick program that I am currently on, we have been busy, well we are always busy but I have noticed it more lately because I have to be more prepared. So these are a few tips I have put together to keep you on track when cleansing and being out and about; whether it be a kids party, a night out or simply just catching up with a friend.

1. Be prepared to say; NO thank you over and over again! Ohhhhhh, so many events that I go to, the hosts offers me food that clearly I am not intending to eat and when I say, "no thank you", they eagerly encourage you to just have one, its only one. Well, its not only one... You have made a pact to your body that you are going to cleanse all the crap from it, so follow through.

2. Pack your own snacks: This is something that I do often. Always have some nuts or something handy to snack on if you get a craving, especially if something looks mouth watering, you wont go hungry. Dont be embarrassed to wip your snacks out and have a chomp. I even take my own milk out to a cafe if I know I am feeling like a creamy hot drink.

3. Take something homemade: I love doing this, I love baking! Make something that you know you can eat and enjoy and take it along to the party. That way yolu wont even be missing out on cake as you can just have a slice of your own.

4. Check the menu: If you are headed out to a restaurant call ahead of time and ask them if they have a meal option for you. If they dont, then recommend your friends try somewhere else where you know you can enjoy something to eat.

5. Drink water: Like any cleanse, the more water you drink the more toxins you wash away.

6. Don't be afraid to be the first one to go home; if you are tired listen to your body and go home and get some rest. You will probably be suprised though, you will most likely have the most energy as you are only putting clean food in your body.

7. Relax and enjoy: Enjoy yourself! You dont have to miss out on anything just becuase you are eating healthier. You are eating real food, enjoy how good your body feels!

That dredded piece of cake.


 Ok, so I think alot of people can relate with me here... How many times do you arrive at a party intending to be saying no to cake and just can't? Well, over the weekend was the best example. I am 2 months on my health kick cleanse of no alcohol, wheat, dairy or refined sugar and over the weekend I attended two birthday parties; a 2nd birthday and a 70th birthday. I am one who is usually pretty organised with food and wont allow myself to feel like I'm missing out so my bag usually consists of natural and homemade snacks to pick on while the colourful food comes past me. I actually feel quite fulfilled saying no, to think that I will feel great the next day... I wont be bloated, its a win!
The 2nd birthday party was a breaze. I took my natural crackers and homous and was chasing Pia around. I didnt have a craving of junk. To be honest, I was actually pretty turned off. Nothing turns me off more than to see children getting filled with toxic crap; so many lollies, white bread, I just dont let that happen in our house. One parent actually said to me, quote... "Oh, she hasnt had a sleep today but it doesnt matter I'll just keep feeding her sugar and she'll be right, she might get a bit grumpy but she'll power through"... Power through? Power through what I thought? Power through getting poisoned, having a high, hitting the deck again and then feeling like absolute crap. I keep my mouth shut, and let them get along their merry way. That is one thing that you become good at when do dont agree with other peoples parenting... Silence!

We made it home in time to have a rest and then headed out to the 70th birthday party at a local club. I ate dinner before I went and was prepared to be saying "no" to the trays of deep fried finger food. When I walked in, there wasn't any of that... All I saw was this amazing cake. And I am talking amazing! It was every colour of the rainbow with the most delicate sugar icing butterflys flying up the 3 teared art piece. Every bit of it hand made by a lovely local lady. I wanted some! I didnt want to wait! I didnt care it was full of crap, I didnt care what it tasted like... I just wanted some and I wanted it now...
So did I stop myself having a piece of cake? Hell no... Did it taste good? NO! I couldnt believe it... it was a dry bit of butter cake! How do I feel the next morning? Hmmmm, Well I have been to the toilet 3 times and its only 10am so that says enough. Was it worth it? No!

As I sat their thinking about the piece of cake I cheated on my belief's with I started thinking about why I was thinking like this? I was a little kid at a party wanting the bright coloured lolly, fairy bread and fizzy drink. I was a kid that wanted the bright pretty food! I wanted utter junk because it looked good! This is what a child feels like when they walk into a party and see all the trays of junk. This is why they want all the bright coloured pretty food at their parties. WE LOVE COLOURS! As people, we are accustomed to wanting things that look good for it to taste good. Its so crazy how we are programmed. As adults, we can say yes or no to anything. We know whats good for us and whats not. For children; they have no idea. They dont have the will power, they dont know what food is right and wrong unless you show them. So dont put the crap in front of them!!! I have said this many times before but your child will only eat what you put in front of them... You can do what you want to your own body but your child is being taught by you. You are the one feeding them so feed them right!
For us adults, there will always be that dredded peice of cake at a party... Its our decision to make whether we eat it or not. Its ok to say no... And its ok to eat it, but we need to accept that our bodies wont like it. I never thought I could feel this good before but when you have been off toxic, aggravating foods for a while you feel your body running well and you dont want to mess that up. I had the piece of cake, I feel shit today. I'm not going to feel bad about it. I accept what I did and now will be positive for the next day of cleansing!

COURSE: RAW LIVING

It was another great day at nature care college with Georgia from Stirring Change learning about all things RAW and LIVING! Raw living is a great introduction to why raw, living food should be a large part in our diets.


During the day we were introduced to many Guru's of the raw food world and how many different theories there can be from fruitarians, to raw vegans, and even breatharians. All the different theories and research was very eye opening and food for thought. Through the day I definitely got the picture that being a raw vegan is perfect treatment for cancer and diabetes as it is so detoxifying, it is a great cleansing detox diet short term but long term may not be that great for our health as it is lacking alot of amino acids most peoples bodies need to work. Don't get me wrong, it has worked for many people and they are totally transformed, for example Mimi Kirk who is over 70 and looks absolutely amazing! But most people that are on a full Raw vegan diet are eating their own living fruits and vegetables that they pick straight from their organic gardens. This is an unrealistic picture for most in this day and age. And taking a suitcase full of supplements


In spite of saying all this; RAW, LIVING food is the bees knees. Raw food caries the most amount of nutrients and our diets should be at least 60% raw every day. This means trying to have a green smoothie in the morning and a big salad with lunch and dinner at least.


We finished the course with some amazing raw food treats as always when you attend a course of Georgia's. It was a great day and I am looking forward to my next raw food experience in July when I attend Omid Jafarri's; Botanical Way Course... ARRRHHH SO EXCITED!


Here are some interesting raw food facts - 

  • We should be eating at least 60% raw foods daily.
  • Cooking food creates chemical reactions that form toxins.
  • The reason why cooked food can contribute to cultivating cancer is that when you cook food it creates endless chain molecules that are toxic, aromatic, peroxidising, mutagenic and carcinogenic (sounds scary I know). For example; in a grilled potato alone a study identified 450 novel chemicals and tested them for toxicity. Every one of the first 50 were proven to be carcinogenic to laboratory animals and then the study was closed down because they were too scared of what they would find next. And then what makes things worse is that if the food is non organic it creates 10-90 times more ETU (a mutagen and carcinogen). Its crazy! Organic is the way too go and if you can pick it straight from your garden while it is still basically alive then its even better (not that that is easy for most of us with hardly a yard).
  • Don't ever mix starchy foods with protein (for example; potatoes and meat). 
  • We should be at least 60% raw in our everyday diet.
  • If meat is eaten cooked it should be marinated and only cooked maximum medium/rare, which will create 50% less toxins when cooking but if you are detoxing for disease reasons then meat shouldn't be included.
  • Raw food can't be the best diet for most long term nutritionally as it misses alot of amino acids but its great for cleansing toxicities like cancer and diabetes. GREAT TO REVERSE CANCER and their are lots of studies to prove it.
  • Raw food is anti-aging!

RECIPE - COCONUT CHICKEN KA-POW!

Why our Coconut chicken KA-POW is good for you?

Lemon juice is high in vitamin C and it very alkalising on the body.


Chillies are a metabolic stimulator and contain high levels of the antioxidant betacarotene.


Garlic has anti fungal, antibacterial and anti-malignany properties and is a great defence against colds and flu.


Onions have potent anti fungal and antibacterial properties. They are also rich in vitamins A, B and C and in minerals including folic acid.


Spinach contains an enormous range of nutrients including chlorophyll, amino acids and fibre. as well as minerals; sodium, potassium, calcium, phosphorus, magnesium, sulfur, iron, zinc, manganese, iodine, copper and Vitamins C, B1, B2, B6, PP, E, K, folic acid, vitamin A. It is very low calories so eat it until your hearts content! Leafy greens should be organic if possible.


Chicken is a great source of protein. Also an excellent source of niacin and a good source of vitamin B6. Always buy organic, free range chicken... no excuses!


Ingredients
400ml home made coconut cream
finely grated zest and juice 1 lemon
1 tablespoon tamari sauce
1 tablespoon chilli flakes
1 garlic clove, crushed
500g Organic Chicken Breast
2 cup baby spinach leaves

1 spring onion finely chopped
Serve with steamed whole grain brown rice.

Method
1. In a large pan, combine coconut cream, lemon zest and juice, tamari sauce, chilli flakes and garlic. Bring to the boil, stirring.
2. Reduce heat to low and add chicken. Cover and simmer gently, 10-15 minutes, until chicken is cooked through when tested with a fork.
3. Transfer chicken to a plate. Stir spinach through poaching liquid. Simmer 1 minute.
4. Serve chicken on a bed of rice. Drizzle with poaching liquid.
