WEARING: Fun in the Sun!


I'm loving that I'm keeping up with my weekly wearing posts, I'm finally starting to feel reasonably good in my body again. Theres still a long way to go but I know things are shifting and its nice to just feel good and enjoy feeling that way. We were out at the Grounds on Wednesday for the IsoWhey wholefoods launch which was super and I wore one of my now staple outfits.

RECIPE: Kale Chips By Pete Evans

Kale chips are quite big news in the health world, and rightly so due to kale’s high levels of iron, vitamin K, vitamin C, calcium and antioxidants, it's no wonder it dons the name 'nutritional powerhouse.'  


Potatoes have always been the predominant ingredient for chips, but potatoes are in fact 'anti-nutrient' vegetables because they contain enzyme blockers, lectins and another family of toxins called glycoalkaloids which aren't destroyed by cooking. My family and I haven't eaten spuds for a long time and we find that sweet potatoes, (kumara) and pumpkin more than make up them.

So back to the kale chips - there are a few different ways you can make them.  One option is to use a dehydrator, just do a little research before purchasing one as they are generally made of plastic and the jury is still out on the effects that a plastic dehydrator may have on food.  I'm sharing the oven baked option with you as I feel it may well be the safer bet.  You can play around with different flavourings to add to the kale and feel free to be as creative as you like because kale can handle some strong spices and seasonings. 

Crispy kale chips

Ingredients:
1 large bunch certified organic kale or Tuscan kale 
Certified organic coconut oil 
sea salt or Himalayan salt 

Method:
• Preheat your oven to 120° C (250° F). Wash the kale thoroughly with cold water and then pat dry. Remove the kale leaves from the tough ribs and cut into smaller pieces 

• Line your baking sheet with some parchment paper. In a large bowl, toss the kale with some coconut oil and \salt, easy on the salt as a little may go a long way. Place the kale on the baking sheet in a single layer, do not overcrowd the baking sheet. Use more than one baking sheet if you needed. Roast the kale until crispy, about 35-40 minutes (check your oven as oven temperature may vary.) 

• Serve as snack

Today I FINALLY entered the beautiful place that is the Grounds in Alexandria. When I say finally, I really mean it. I have heard so many amazing things about this place and it just seems so far away that I don't ever get to make the trip. I am a bit of a sucker when it comes to ALDI. The organic range is great which is why I’m the first one in the line, before opening time, when each week’s Special Buys are launched. You could call me a bargain hunter, but quite simply, I just like good quality and affordable prices. I’m a mum!

Barnardos runs a Mother of the Year award to support and celebrate incredible Mothers. It’s all about the importance of mums and the importance of children feeling safe in their homes. Every child deserves a loving family and Barnardos works hard to give the best they can to children and families in need.

Barnardos Mother of the Year awards isn’t about the mum who’s achieved the most or who’s been promoted in their chosen work. It’s bigger than that, it publicly acknowledges the huge contribution that mums make just being mums, giving their all to their family and to others to help shape Australia’s future for the better.

It’s the nurturing and support they give children to empower them to reach their full potential and be what they want to be. It’s about celebrating the love we give our children and giving them the tools emotionally to support their dreams. That right there, is such a beautiful thing. It’s hard as a mum, when you feel that life is crazy and you are just taking one step after the other. Having kids is busy but we should just stop for a moment and celebrate the thankless mothering tasks by giving love to mothers who give so much love to others. We as mums need that!

When I hear of so many children who suffer from abuse and neglect it breaks my heart - knowing we have an organisation as great as Barnardos that we can support gives me a lot of hope for a bright future for more of our Aussie kids. To celebrate wonderful mums with such a brilliant initiative gives me so much joy and watching this clip from the 2014 awards ceremony this year brought a few tears to my eyes. What an empowering project!

I'm just entering week 3 and I am feeling better than I have felt in a very long time. I feel good physically and I can definitely see some changes for the better but where I am seeing most of the progress is in my head... My sometimes-very-negative mind space (as surprising as that may sound) is lifting and I am feeling more like the fun person I want to be. Each day, when I wake up and hit play to the music and charge into my 20 minute work out, the fog lifts and my emotions start to dance. Being a mum is freaking hard and remembering to nurture yourself in the areas you need is the hardest job of all. I need exercise in my life, everybody does. It hits play to those happy hormones and gives you the boost of energy that we all need and shares it with our crazy kids throughout the day. I have struggled with finding the motivation for exercise for quite a while now, while I eat well, I am learning more and more about how important all aspects of our lifestyle contribute to our health and how we feel.
This program has given me that motivation to just get up and get moving first thing in the morning. I literally throw breakfast in front of the kids and start my workout. We sing to the beats and they laugh at me while I'm bouncing around the room, I love it. It sets the day right, it gives me that fun feeling and happiness that I need to charge into each day and its safe to say I'm getting my groove back and getting addicted to this fitness thing again.

Week 3 calls for a few more moves and more amazing food. I'm looking forward to hitting my workout tomorrow morning and seeing more physical and emotional changes along the program. Bring it!

HAVING FUN AT SYDNEY'S FITNESS SHOW

What a fun day! Last weekend, my blogging Buddy; Lyns from "Loved it Blogged it" and I were very excited to be invited to the Sydney Fitness Show to check it out. We left the kids at home with their Daddies and had a ladies day out connecting with some amazing and inspiring people and seeing the latest health and fitness products to hit the market. There was so much to be seen and be inspired by, there are so many products out there for fitness.
Having being only 1 week into my new fitness program by Eat Fit Food, I was on the hunt for all things that would keep me motivated and feeling good. My fav finds would have to be the On Running shoes, the I'MFIT healthy lifestyle products and the Protein bread co (OMG!!! AMAZE!).

I highly recommend heading to this great show next time its in town. Its a winner! x

What a crazy thing this thing called life can be. I am a huge believer is preventive health, living a way that promotes wellness by eating as organic as possible and living tow-tox. For those that know me, it hasn’t always been this way; I was a total party girl (still am a little), crazy nights that led into days that led into more nights. I exercised a lot but I ate badly. I partied through it and kept on having ‘fun’, going to uni and going out on the weekends. Occasionally the grief would come to the surface but I would just push it back down and keep on keeping on. That was until 4 years later, when I found the man of my dreams, he married me and then we became parents… Right there, that was when I was ready to face the reality that something had killed my dad. He hadn’t just passed away, he had been hit in the head with the loud flying bullet that cancer is and that was not ok. Cancer is NOT something that we wait to get and surrender to, it’s a killer that we can be in the fight to prevent and bring our kids up to do so too! I’ve talked about my pinky promise I made to my inspiring sis a couple of years ago here but its more than that! Women’s health is so important; we are the powerhouse of our families, the emotions, the support, the one that picks our babies up when they are hurt, the one that cuddles them when they are upset, the one that forgets about ourselves as we perform endless acts of selfless-ness. That is us, we are mums! That is why we need to look after ourselves and support each other through uniting together.
This month, Cancer Council NSW is encouraging all women to make a #PinkRibbonPromise to someone close to them to show their support for all women who have been, or are affected by breast or a gynaecological cancer. The #PinkRibbonPromise is a pledge that anyone can make to their sister, friend, mother, husband – anyone close them – to show that they will be there no matter what. I just love this, I believe that the support we can show one another is such a beautiful and empowering thing we can do.

I made my #PinkRibbonPromise and it is to all of you; to keep my vision strong, and to inspire and empower all of YOU to make the best, informed health and food decisions for yourselves and your families with pride! To Live it and Do it!

Tuesday Chats: Interview with the lovely Grace Culhaci; founder & CEO of Zk'in Organic Skincare


I am really excited to introduce you to the wonderful Grace from Zk'in Organics today. She is a wonderful woman on a mission, an inspiration, and a game-changer! I was lucky enough to sit down with Grace at the launch of her amazing Organic Skincare range; Zk'in. She has an incredible story to tell and I thought it would be great to have her as our first interview to begin our "Tuesday Chats" feature full of inspiring woman and businesses again. So here goes...

1. Tell us a bit about yourself and your business. How did it all start? I faced life-changing health challenges during both my pregnancies - firstly, a skin condition, and then an inoperable tumour on my optic nerve.  To improve my wellbeing I examined my diet and beauty regime, and adopted a healthy organic lifestyle.

I observed that while many women make healthy food choices they are willing to compromise on their skincare and use synthetic ingredients – the equivalent to a junk food diet for our skin – because they feel organic skincare, while safer, might not deliver the results they are looking for.   I wanted to develop a range that would offer genuine safety but was also results based and thus the zk’in (pronounced skin) range was born.

Everyone faces challenges but deciding which skincare products to trust should not be one of them!

2. What Does Organic Skincare mean to you? To me organic means certified organic. Many manufacturers making organic claims for their products bypass the certification process making their organic percentage or ingredient safety claims nothing more than self-declarations. Certification is important as this guarantees the consumer that all product claims have been independently verified.

The zk’in certified organic skincare range offers 12 products to address every skin concern and life stage. Every product proudly bears the COSMOS logo – the new international organic beauty standard. COSMOS becomes compulsory for the major European certification bodies in 2016 but we are already there – making us true pioneers.

I believe organic skincare should be good on the inside and out, so all our packaging is BPA free, recyclable and food grade. Most of the fancy shapes achieved for beauty packaging is made with acrylic which is non recyclable so we worked with manufacturers to develop recyclable versions of packs for us that are free from acrylic and PVC.

3. What are your non-negotiables when it comes to your diet and/or skincare? My diet non-negotiables – I understand the connection between animal products and inflammation and therefore eat a mostly plant based diet, with some fish.  I do not eat gluten, and must sprout all my grains.  I buy organic produce and drink only water or coconut water – fizzy drinks are not allowed in our house!

My skincare non-negotiables – If I’m buying organic food to avoid petrochemicals and pesticides I certainly don’t want to be rubbing those on my skin either! The ‘z’ in the zk’in brand name ties in with our zero tolerance policy to anything less than the best.  There are no parabens, no sulphates, no petrochemicals and no unnatural ingredients in any zk’in certified organic skincare product, achieving naturally beautiful and clincially proven results, free from worry about toxins or synthetic ingredients.

The formulations feature a unique 100% natural preservative system, which earned the company a research and development grant from the Australian Government for contributing new knowledge to Australian Science – that is something I am very proud of.

4. Do you have any advice or inspiration to send out to any of our readers that are thinking about starting a organic way of living? Green juice every day – this has been part of my life for over 7 years and I truly see the benefit in my ability to keep going despite a very busy lifestyle.  My other big tip would be to write a meal plan – it works!  I buy only what I need for the meals planned for each week, so no matter how tired you are when you come home, you know what to make and all the ingredients needed are on hand.  At the end of the week your fridge will be empty with nothing wasted. Simple, keeps you healthy and saves you money.

5. Food; If you had half an hour to cook dinner and realised you didn’t have anything planned, what would you cook?  Normally I work from a meal plan which is kind of essential as I sprout all my grains and need up to 3 days lead time to make a simple rice dish – but if I couldn’t do that and had to make something super fast on the spot I would resort to my fridge and cupboard staples and make zucchini fritters (no sprouting required – phew!). I always have zucchini in the fridge, and you can add frozen peas (every freezer seems to have a packet of those!) plus gluten free self-raising flour, eggs, fetta cheese, soy milk, and olive oil.

6. What’s your favourite juice or smoothie? My green juice every morning varies to ensure a good rotation, but essentially the recipe is:

  • Kale
  • Celery
  • Spinach / or silverbeet
  • Banana / or apple / or pear/ or kiwi - whatever you’ve got on hand
  • Ginger
  • Spirulina
  • Chlorella
  • Orange / or orange juice / or camu camu powder
  • Coconut water
  • Ice
These ingredients help detox my system, give me energy as well as aiding in glutathione production to keep skin healthy and free of age spots.

7. Do you have a recipe you would like to share with us today? I’ve been experimenting with raw food this year and love chia pudding – great any time of day – I eat it for breakfast with fruit and gluten free museli, as morning tea topped with dates and maple syrup and even served as a dinner party dessert topped with homemade frozen fruit sorbet.  Lots of variations, easy to make and super nutrition.

Here’s the basic recipe:

  • 1 cup water
  • ½ cup coconut milk
  • 1 cup fresh or frozen organic berries  
  • ¾ cups chia seeds
  • Splash of organic vanilla extract

Method: 

  • Blend the water, coconut milk, vanilla and berries in your vitamix until nice and smooth
  • Pour mixture into a large bowl
  • Slowly rain in the chia seeds, stirring to incorporate
  • Cover the bowl and refrigerate overnight
  • Serve for breakfast topped with dates and maple syrup or gluten free museli
  • Notes:  You can use 1 ½ cups water if you want a lighter option, or add ¼ teaspoon xylitol (from beech not corn) for sweetness if you desire
The variations are endless!  I also freeze the pudding once the seeds have expanded and make chia ice blocks in summer.

RECIPE: IsoWhey Banana and Coconut Frappe



Serves 1
Prep: 5 minutes

Ingredients:
1½ cup coconut milk
1 fresh banana
1 tsp. chia seed
1 tsp. coconut oil
1/4 cup ice cubes

Method:
Pour the coconut milk into the blender with the IsoWhey powder, chia seeds and ice. Blend.

WEARING: Ciao Bella Travel



Life is about being comfortable right? Since becoming a mum I am very casual. I like to feel good and I like to be really comfortable in what I'm wearing so when I find a good piece of clothing I get a little addicted and don't stop wearing it until its worn out. I seem to have alot of clothes but I always go back to the same things. This weeks winner is the Henley Tank Dress from Ciao Belle Travel. Made from bamboo viscose and organic cotton, the fabric sits in exactly the right spots and feels luxuriously soft against the skin. Its so easy to wear especially when running around doing mum stuff but still wanting to look like I've made some effort.
