RECIPE: Osso Bucco Family Stew

Being on the GAPS journey, its all about getting all that good, juicy gelatine and bone marrow into you to heal the gut lining. This means lots of slow cooked meals and stews. A staple of ours is Osso Bucco, its really simple and super tasty and you can make heaps at a time and freeze it down in meal portions for when your on the go or don't have time to cook. 
This recipe is a really hearty meal for the whole family full of good quality, stable fats, protein and the super nourishing addition of the bone marrow and broth. Eat up, your gut will love you for it!

Preparation time: 15 minutes
Cooking Time: 90 - 120mins
Servings: Serves 4-6

Ingredients
2 brown onions, diced
3-4 cloves garlic, diced finely
4 carrots, diced
2 stalks celery, chopped
1/3 cup fresh flat leaf parsley, chopped
1 sprig of oregano
1 sprig thyme
1 tablespoon coconut oil
1 cup bone broth
1.5kg Osso Bucco beef
2 cups of pureed tomatoes
1 tablespoon apple cider vinegar
Salt and pepper

Method

1.     Preheat oven to 160 degrees.

2.     In a large deep baking dish place coconut oil, carrots, celery, onion, garlic and herbs and give it a stir to combine. Lay the osso bucco beef over the top of the vegetable mix and then pore in the tomatoes, bone broth, natvia, apple cider vinegar and salt and pepper. The liquid should cover the meat.

3.     Cover with a lid and cook for 1 ½ - 2 hours or until the meat is very tender and falling off the bone. Once this is happening push the bone marrow from the bones into the dish and remove the bones and discard. Give everything a big stir to combine all flavours.

4.     Serve with sweet potato mash, rice/quinoa or simple mixed veggies

Tips and Tricks
* If you would like a thicker sauce and you can eat corn then just add a little corn flour and stir through until thickened.

WEARING: LORNA JANE


After a couple of weeks off my focus; today I am diving into the 6 week Raw Slim and Tone Program with Amazonia. I am feeling really focused and really excited to reach my next set of goals! Its a really great feeling. I started off the day with a lemon water and a big green protein smoothie using the Amazonia products and greens from my garden. I had a bit of running around to do with the kids this morning with swimming lessons and grocery shopping but I made time for a walk/jog with my sis mid-afternoon. I wore my new Lorna Jane gear, seriously how fun are these colours? The perfect addition to the fitness wardrobe.

I am in love with this outfit pictured above; the tights are so fun and bright as I never go for patterns but I just love them and they are so comfortable, I would wear them all day. My absolute new favourite Autumn/Winter jacket, I think you will be seeing me in this a lot. Its perfect for everyday, from the shops, to the park, to the play ground to the gym, its just awesome. So comfortable and so easy to wear. It was definitely love at first sight. The perfect motivation to hit the next 6 weeks with full fitness force!

A Special Word To All The Stay At Home Mums - Your job is one of the most important of all!

Let me give a warm welcome to a beautiful fellow Northern Beaches Mum; Kate Wright. Like most mums, Kate was having 'one of those days' and after a hard day of finding no time to get anything done she confided in her husband and he shared with her some insight of just how important a stay at home mum really is. This is the simple, most heart felt stuff that we forget in between all the nappy changes, meal preparations, school drop offs, etc, etc, etc. This past week for me has been a doozy and I know I shared my frustration with you a few days ago here so you can imagine that when I read this post on a local mums forum It made me feel good, empowered and inspires so I just really wanted Kate to share it with all of you! We can all forget how important we are and how much our kids need us to be mums, just us, just the special people that we are... Thanks Kate.

I’ve got to share a conversation that I had with my husband with you because if you are a stay-at-home mum who has had one of those days where you’ve felt beaten, doubtful and jaded by the end of the day….this might change your perspective on your role. It did for me.

So I was complaining the other day to my husband that I never get anything done with my 15 month old and 4 year old children at home. My list of chores hardly gets a smudge let alone wiped clean and life as a stay-at-home mum is exhausting!

After some time, he says to me… I think you have forgotten why you’ve been ‘employed’ by us…..??? I’m confused, but he goes on to say,

‘If you died tomorrow and you had all the money in the world, who would YOU pay to raise your children when you’re gone? He specified that if it couldn’t be him or family members….who would I trust? Who would I trust to love them, to nurture them, to challenge them, who would know their routines, their idiosyncrasies, their medical history, their diets, their moods, their likes, their sensitivities and their hurdles….who could offer all of this to them?’

Then he asked, ‘And if, by miracle, you found someone who COULD provide all of this, in a full-time position, who was willing to work EVERYDAY, in sickness or in health……what would you be willing to pay them?’ 

‘Thousands.’ I said, without hesitation. 

‘But even then, they could not do a better job than you are doing. YOU are THE expert on our children. THE Specialist. Quite frankly, we could not afford your services…..and yet, that is what you provide everyday for our children. You are not ‘employed’ to clean the floors, make the dinners, wash the clothes, etc…if these things get done, it is a bonus, NOT an expectation. You are ‘employed’ as the state-of-the-art, expert in the field of raising our children…..and darling, you’re doing an exceptional job.’

He is a bit of a legend and the conversation really has changed my perception of my role as a stay-at-home mum.

REAL MUM REVIEW: The Lux Curly

If you know me well, you would know me for my dead straight hair. Its thin and drys very straight to my head, no blow dryer necessary. It is great for the anti fizz factor but it is frustrating from a body point of view. I have always just done it in the same way, out and straight, and up with a hair tie if I'm rushed. It can be great in a lot of ways but theres no real fun with it, its kind of boring. I have always wanted that big thick messy hair that i see some ladies rock, it looks good down, and it looks awesome up all messy. RECIPE: 'Notella' - A Healthy Chocolate Spread + a FREE HEALTHY BREAKFAST EBOOK By Brenda Janschek

I'm excited to introduce you to Qualified health coach and all round amazing whole food mum; Brenda Janschek. Here we have her delicious 'Notella' recipe; a chocolate spread that is actually good for you. Enjoy.

We all know and love the scrumptious spread Nutella. But when you consider there are 5 teaspoons of sugar in each two-tablespoon serve, you wonder if there’s a better way.
Well, there are a few healthy versions of the Nutella recipe floating around, and I’ve played around with them and tweaked the living daylights out of these recipes to finally create my family’s favourite version.
We all think it’s much tastier than the commercial Nutella, and it’s much healthier too, using healthy oils, sugars and no artificial flavours. What’s more, as you’ll see, sugar is not the main ingredient in this recipe.

Ingredients
1 cup hazelnuts
2 tablespoons cacao powder
1/4  cup pure maple syrup or brown rice syrup or raw honey
1 teaspoons vanilla extract (optional)
1 teaspoon cinnamon
2 tablespoons coconut oil or macadamia oil
Coconut cream (optional: gives a silkier, creamier texture)

Preparation
Place nuts in a food processor and blend until smooth. This  can take a few minutes.
Add cacao powder, maple syrup, brown rice syrup or raw honey (or a combination), vanilla, cinnamon and oil.
Whizz up all ingredients. If you like it thick (my kids do) then you are done. If you like it a bit smoother add a little coconut cream, bit by bit, and whizz until desired consistency.

Thermomix Instructions
Whiz hazelnuts on Speed 9 for 1 minute
Add cacao, sweetner of your choice, vanilla extract, cinnamon, oil of your choice and mix Speed 6 for 30 seconds.
Push down the sides, add coconut cream if using and mix Speed 6 for 20 seconds.
Store in a glass jar in the fridge.


We love our Notella:
• spread on sourdough toast for breakfast or a snack
• spread over apples or bananas
• mixed with natural yoghurt
• spread on spelt and buckwheat pancakes
• mixed with warm milk for a hot chocolate
• eaten straight out of the jar with a spoon
With regard to the hazelnuts in Notella, I always recommend activating them the night before by soaking in a water and acid medium (like Apple Cider Vinegar or sea salt) and rinsing well in the morning. This makes the nuts much more digestible.

Cotton On Kids Launches New Sleepwear Range!



Its been an exciting couple of weeks! Last week was jam packed full of fun including flying down to Melbourne (Such a fun day that I'll share more with you soon) to have a sneak preview of Cotton On Kids' new and improved sleep wear range and this week I get to show you my super cute models sporting the goods from our favourite store for little ones.

Keeping it real - A word from a frustrated mum


A moment of truth, a moment of frustration, a moment of "why is this so hard?" is happening over here... Right now, I sit in my filthy house looking at piles of washing waiting to be folded, food crumbs on the floor, and all round mess everywhere. And then, a child comes over to me and tells me their hungry. My own child that it is my job to feed. And I sigh, almost tears in my eyes thinking; "do you really need to eat again?"
I love being a mum, I love being a whole foodie and I love knowing that everything that goes into my child's body is only the best to purely nourish them and feed their growing insides, meeting their individual needs, healing there little guts and giving them the best chance at being the best whole healthy adults that they can be. That is whats important to me, food is important to me.

Washing, cleaning and all round household duties finds themselves on the back burner. I can cope most of the time with this, my husband cannot. He likes things tidy. I would love to have time to keep things tidy. But instead of finding the time to keep my house in order, I am cooking, always cooking. When I decided to take on the GAPS journey over 6 months ago, I knew it would be hard but it started off so easy. I was on top of all the broths, the supplements, the soups, the stews. The kids ate when they were genuinely hungry, they weren't interested in snacking because the snacks were limited to broth jellies and left over stews. I felt like I was all over it, we were seeing results and it was great.

Today, I look at Sunny as he is recovering from yet another rash all through his face that I believe was a reaction to too much fruit, while I change the never ending poo-ey nappies for the day, almost dissecting the poo screaming out inside; "Why does it still look undigested?", in between being nagged for another snack and being told by the big kid that she doesn't like what I have prepared and will not be eating it... But will ask me in 5 minutes for a banana. The thought of preparing and cooking the next meal and always having something ready is always in the back of my mind, and the guilt I have for giving into giving them a piece of fruit or some nuts when I know its going to give them the runs. There's no time to stop. Its just another meal, another day. And the never ending pain of another rash and the questions as to how it came about and why isn't this little kid fixed yet.

Today, I am frustrated, frustrated that I can't make porridge for breakfast, pass my children a vegemite sandwich for lunch and make a risotto for dinner. I am frustrated because real food is expensive and filler foods like bread, cereals and rices are cheap. Frustrated that supplements cost money and that chiropractic and holistic doctor apointments take a huge chunk out of our wage. Frustrated that life isn't simple and that the society that we live in is so full of gut issues that we think its normal to not feel right, that its normal when our children have a rash, or are constipated or funky coloured poo is fine. Or its normal for our kids to take forever to start talking or to have a major tantrum at the park. Or to be waking up all night. When really its not normal for any of that. We want what is best for our children, we want them to be healthy and we want them to have the best chance at everything so that is why I am doing what I am doing. I am tired and today I am frustrated at the world that everything is not simple but tomorrow may be better and the next day even better. Why? Because I am doing whats best for my own children, exactly what they need right now. Today I will be frustrated but I will keep at it, keep cooking and keep giving myself a break from the bother. I will focus on health and what I'm doing thats good. I will slowly fold my washing and tidy my house. But for now, I will sit on the couch with a cup of tea, taking a few deap breaths and I will be ok because I know all the work and effort I am putting in is for my beautiful children to thrive.

Some of you are going to read this and think get over yourself or stop being such a downer, I should be inspiring you. Well I hope some of you take away that its ok to feel like poop sometimes and feel like your drowning in piles of washing and dirty dishes, we are all in this together working the best way we can. Us mums must stick together!

5 years with you...


5 years ago today; I married this guy pictured above, that won't let me take photos of him and yawns with boredom at me asking for them but I couldn't imagine my life without him... It's been the craziest 7 years of my life and I'm so glad you've been in it! I'm more in love with you now than I've ever been; your the best dad, best husband and absolute best partner in crime. Love you forever!

Today I felt like a queen waking up early to go for a farmers market run, a quick stop into my favourite cutter and friend Justine for a hair cut (which included a quick lesson on how to use my Cloud Nine wand to get the textured wave look), then was totally spoilt with an amazing batch of sugar free cupcakes from The Classic Cupcakes Co. Did you know that they only use natural ingredients? All natural food colourings, free range eggs and grass fed butter! So nice to find a place full of treats that values real food ingredients! Perfect Valentine's Day surprise too...

Settling in for the afternoon with my babes for some quiet time on the couch, when a surprise came at the door. It was the Flower Factory with a HUGE box of the most beautiful dozen of tall long stem red roses. So stunning! I just can't stop admiring them. I'm not sure if I have a vase big enough to put them in. They would have to be the most perfect roses I've ever seen!

It really was the perfect day full of love and I'm more than excited for the years to come that I get to explore more of life with my perfect little family.
