RECIPE: Hearty Lamb Meat Balls

This may excite you or totally freak you out but either way, you need to listen to me when I tell you that you won't even notice it in it. Its a hidden and tasty way to get your kids and yourselves eating organ meats so embrace it and lets get cooking!
500 grams lamb mince
1 lamb heart, frozen
1 onion, finely diced
1 clove garlic
1 handful parsley
Big pinch of salt and pepper
2 tbsp coconut oil
Preheat the oven to 180 degrees.
Defrost heart a little, until its soft enough to cut but still frozen.
Place onion, garlic and parsley into the food processor and whiz until chopped finely, remove from food processor and set aside.
Cut lamb heart into cubes, place the pieces into the food processor and whizz until it resembles mince.
Now add in the rest of the ingredients, including the herb and onion mix and whiz until all combined and stocking together.
Cover a large baking tray with the oil and then scoop out tea spoon sized bits of mixture, roll into balls and lay out on the oiled tray.
Once you have rolled all the mix into small balls and placed them on the tray, put the tray into the oven and bake for 20-30 minutes. You may need to check half way through and give them a turn to make sure they are cooking evenly.
Serve these babies with a homemade dipping sauce. And don't fear, you will love them!
