RECIPE: Zucchini Chocolate Brownie


Have you ever seen Zucchini look this good? This is a fun veggie smuggling idea served as a chocolate brownie treat. Its a really fun afternoon tea, I just love it that know one has any idea that it is full of zucchini and my kids love it!

Ingredients
2 cups zucchini, finely grated
3 cups almond meal
1.5 cups coconut sugar
1/2 cup coconut oil
2 tsp vanilla powder
1/2 cup cacao
1/4 cup carob powder
6 eggs
1 tsp sea salt
3 tbsp ground chia seeds
1 tbsp coconut flour
1 cup chopped walnuts

Method
Preheat oven to 180 degrees.
In the food processor, add all ingredients, except the zucchini and the walnuts. Process until well combined.
Pour mixture into a large mixing bowl, add the zucchini and the walnuts and mix it all through.
Once all well combined, pour mixture into a lined baking tray and bake on 180 degrees for 40 minutes or until cooked through. You can test this by sticking a skewer through the centre and if it comes out clean, it’s ready!
