RECIPE: Coconut Cupcakes

These babies are a serious winner. They taste like a very mainstream vanilla cupcake; fluffy and sweet but they are made using mostly coconut products. Everyone that taste these cupcakes love them. You can keep them simple as muffins or cupcakes or make it into a cake. I am currently making 36 of these guys for a superhero party tomorrow; a farewell party for our kids with their best friends. 

Coconut Muffins/Cupcakes

3/4 cup of coconut flour
6 eggs
1/2 cup coconut oil, melted
1/2 cup of coconut nectar or honey
1/4 cup coconut milk
1 tsp of baking soda
1 tsp vanilla 
Pinch sea salt 
Coconut flakes to decorate.

Preheat the oven to 180 degrees.
In a food processor place all wet ingredients and whiz until combined. 
Add in all the dry ingredients and process again until mixture is well combined and smooth.
Separate mixture into cupcake cases. 
Bake for 25 minutes or until cooked through.
Let muffins cool and serve on their own or with fresh coconut cream and strawberries.

Cutting miles...

Wow! What a week, I have done more km's than I have ever done in the one week but boy have we had fun. Here's the week in rewind...

Girls weekend - Central coast NSW
Good friends, good food and freedom, what more could any Mumma Bear ask for. A beautiful friend of mine has a holiday house up on the Central coast and a small group of us took the trip up for the weekend to bliss out and eat. Yep, there was lots of good food going around and boy did we eat. haha. Homemade soups, healthy treats, fresh juices and delicious meals from a fun organic cafe down the road with some relaxing yoga and craft sessions in between.. It was a great time to reset our bodies and rid our brains of the everyday chaos.

Staying at mums - Far South Coast NSW
On Sunday Morning, I got in the car and took the 8 hour drive from Avoca to Merimbula on the Far South coast of NSW, by myself. The drive was long but very therapeutic enjoying the quiet in the car as I went.
I met the family at Mums house where they had arrived a few days before. We enjoyed some family time and the loveliness of the area that we love.

Snow Day - Thredbo Resort NSW
As Mums house is so close to Thredbo, Little P and I couldn't help but take the opportunity to head on up for a snow day. Girls only of course, "No boys aloud" as P would say. We packed up the Ford and travelled the 3 hour drive up to Thredbo where we spent the day cruising the mountain as the sun shined down on us. It was such a beautiful day. The snow was awesome and day was perfect. Princess P had the best teacher at Thredboland and got on the chair lift for the first time, doing a couple of runs with her group. It was so cute to watch and I was such a proud mum. The smile on her face as she laughed and the love of the snow beamed out of her was priceless. I love that I can share with my kids, what was such a big part of my life growing up.

Our house that we own down the coast, has been vacated by our amazing tenants. This is bitter sweet, as it means we start our adventure down their earlier than planned but we leave our friends up in Sydney which is sad.
We were stoked to see that the house has been so well looked after and we decided to set up a bed and camp in the house a few nights. Such fun to be in their and start seeing where our life will be for at least the next couple of years. It's a really exciting time.

Back to Mona Vale
With the launch of #sugarfreeseptember looming over me and my latest eBook; 'Healthy whole food Sacks' ready to go, I had to get in the Ford Kuga again and back to Mona Vale to get on my computer to get the party started. I'm pumped for this years challenge and excited for Breville to be on board to offer such a fun giveaway for all our challengers. If you want to find out more about that, go here.

What a road trip!
Such a huge trip, which felt like around the world, but it felt good driving it in the Ford kuga with all its fancy features and fun loving feel. It's a safe ride so its so nice to feel at ease as you drive. On the long drive, my favourite feature is definitely the hands-free tailgate. I know your all like "WHAT THE?" yep, you can set the car to stay 3 or 4 or 5 (or whatever the amount of space you want) car spaces behind the car in front. No matter how fast or slow that car is going, you sit nicely behind it with the space you locked in. If they slow down, you slow down. If they speed up, you speed up. Its so cool. I love it, handsfree driving really? haha.

REAL MUM REVIEW: smarTrike Explorer 5 trikes in 1

Recently my little Mr Sunshine was given a smarTrike Explorer 5 trikes in 1 in grey to road test. It was so fun to see his excitement as we opened the box and even more fun to put it into action. He is in the 24 month + category but we took it for a spin in all stages to see how it all works. We had had a cheaper version of this type of thing for our Princess P when she was smaller but we weren't that impressed with it as it didn't steer very well and was an all round pain to use unless it was just to push around the house. When we opened up this smarTrike, we could see the difference in quality straight away, all features function great and it is fun to use for the child and the parent. What is great is that it is an actual stroller that works well but it's in the form of a trike for the kids so they love playing on it which means more walking for us mums or time out at the shops.

So heres the run down...

A stroller is an essential item for parents, however keeping a baby or toddler happy in a stroller for long periods of time is not always an easy task. RECIPE : Simple Coconut Yogurt

Simple Coconut yogurt
Coconut yogurt is one of those things that can be very expensive to buy but so simple to make. You will surprise yourself how fun it is culturing your own creations on your bench top too. It feels like one big science experiment.

2 young drinking coconuts
2 probiotic capsules
1 tbsp coconut nectar or honey (optional)
Clean glass jar with lid

Safely crack open your coconuts.
Using the back of a dessert spoon, scrape out all the coconut flesh and pop it in the food processor along with the coconut water from one of the coconuts. Keep the other coconut water for smoothies.
Whiz in the food processor until mixture is thick and creamy like a very thick coconut cream.
Transfer coconut cream into your clean glass jar*. Open the probiotic capsules with your fingers. Pour the probiotic powder straight into the cream and stir through the powder using a non-metal spoon, discarding the capsules.
Put the lid on the jar and sit it on the bench out of direct sunlight for 12 hours. You will see little bubbles forming in the mixture as it cultures.
After 12 hours, open up your jar and you will have natural sour coconut cream.
Eat it natural or add in your coconut nectar or honey giving it a good stir for sweetness.
Store in the fridge up to 4 days.

*Tip: To make sure your glass jar is clean, boil it in clean water for 10 minutes and air dry.

Our Snow Weekend at Thredbo

Last weekend, we packed up the Ford Kuga and set off for an adventure to Thredbo. The weather forecast was for snow so we weren't sure what to expect and how the kids would all go in the cold.
We left at lunch time on Friday and with a few stops on the way; got to Thredbo Village just after dinner time.
We arrived at Kasees Lodge with all our gear and settled in nicely to our own self contained apartment which looked straight out onto the snow fields, it had it's own kitchen (a whole food mums happiness) and a welcoming fire place in the centre of the lodge for all guests to enjoy.

We knew we had a big weekend so we got to bed early with the excitement to see the kids reactions in seeing snow for the first time in the morning when the sun rose.

We awoke to our little Sunny jumping up and screaming that there is "SNOW, SNOW" everywhere. The snow was falling on our balcony so gracefully and the kids were filled with happiness, excitement and craziness...they wanted to get out there straight away. We dressed them up warm and they ventured out on the balcony as the snow fell on them and they tried to get it to fall into their mouths. The look on their little faces was priceless, they were just in shock that snow is real, it's wet and it is cold. It was really cute. Andrew and I kept looking at them, looking at each other and laughing at the happiness they had and were expressing in their own little funny ways. They'd only seen snow on the movie; 'Frozen' so they were bursting at the seams to get right outside and start building 'Olaf' the snow man.

Snow was falling and we slowly made our way out to explore and get our ski hire. The great thing about Thredbo is that it has everything you need; you can arrive with nothing and hire all your gear including your equipment and snow clothing for your stay, grab your lift passes and your set. There are also great restaurants, bistro's and cafes in the Village.

I loved staying in the Village as we could pop back to our lodge during the day if the kids were tired or we got too cold. It was great as after we got our ski hire; Andrew took Sunny back for a rest and I could take Pia down to Thredboland.
Thredboland is a kids paradise, princess P was in her absolute element, saying she loved it is an understatement. As a parent it was so nice to know I could drop my daughter off to a great place where she can learn to ski, have fun and make new friends all while I can have some time on the mountain myself.
The kids program is fantastic at Thredbo, the instructors are fabulous with kids and bring out the fun of the snow in a small group environment. Pia, especially loved the train rides around Friday flat, going on the magic carpet on her ski's and learning to ski all by herself.

With the boys having a rest and P at Thredboland, I was a free agent. I spent the afternoon cruising by myself, getting my feet back on my snowboard and enjoying the quiet time on the beautiful mountain. It was so amazing to feel that freedom of snowboarding again, there were lots of funny falls, laughs to myself and sore legs at the end of each run. Got to love the burn hey? So great to be active doing something that I used to do so much of as a kid.

After a huge day out on the snow, we had dinner in and settled in front of the fireplace at Kasees lodge. Such a blissful atmosphere. Another early night was called for.

Up early, Sunny couldn't leave the lodge without his ski's on. "My Sti's! I Sti! My Sti's" was on repeat from the little man, "sti's" meaning ski's of course. We laughed and laughed all morning as we caught the village bus down to the lifts. Andrew went on his way for a few runs and I played with the kids in front of the bistro at Friday Flat. It was so much fun, we built a snow man and I pulled the kids around on their tiny skis. They looked so cute all rugged up and bursting with happiness. The snow was pumping down and the kids weren't bothered by the cold but instead, excited to be playing in it and experiencing snow, the real thing.

Andrew took turns of taking the kids up the Friday flat chair lift and skiing down with them between his legs. It was amazing. Sunny was obsessed and would hardly let his sister have a turn. I was so proud of him, seeing his tiny little body huddled up next to Andrew on the chair lift. No fear at all.
Pia spent another afternoon at Thredboland and after a full day of snow, by 4pm we were pooped. It was so simple to return all our ski hire at the bottom of the ski runs. We packed up the Ford kuga and got ready for the trip back to Sydney.

Wow! It was now that the snow really started cranking, it was falling down heavy as we drove from Thredbo Village to Jindabyne. It was even falling right down to Berridale. It was awesome but we had to drive slowly watching for ice on the road. It was great driving in an AWD as we didn't need to put chains on in the snow.
As we got out of the mountains and towards Canberra we could put on the adaptive cruise control and lane keeping aid and enjoy the drive. We had never experienced these features before and Andrew got a bit over excited telling me; "You can drive 4 cars behind the one in front, hands free and stay in the lines, watch this!" Hah it really is amazing. It was a great trip back.

We loved the whole Thredbo experience and can't wait to get back down there. It was so much fun sharing the snow with our children and watching their little faces as they light up and get to be so hands on with something that we grew up with and truly love.

We’re in the peak of cold and flu season here in Australia, and sometimes it may feel like you just can’t shake off those symptoms of cold and flu, no matter how hard you try. Other times, it can feel as though your household is playing a game of hot potato- only this time with a head cold! Instead of reaching for cold and flu tablets, try giving your immune system a break and nourish it naturally. Mother-nature has provided us with a number of remedies for the symptoms of cold and flu that are safe for both you and your family. Stephen Eddey, Naturopath Nutritionist and Principal of Health School Australia has given us a list of his go-to natural remedies to take this winter, to help you stop those sniffles, once and for all.

1. Fresh Picked Olive Leaf Extract
Antioxidants eat up free radicals that weaken our immune system and cause inflammation. Ginger tea is said to help ease headaches and sore throats, and is used as a traditional asthma reliever in the West Indies. Ginger has potent antioxidant, anti-inflammatory and antimicrobial properties and can help break down the accumulation of toxins in your body that make you susceptible to infections, particularly in your lungs and sinuses. Sip on ginger tea, or add some ginger, honey and lemon to your peppermint tea for a powerhouse cold/flu fighting blend!

5. Zinc
You’ve probably heard this one before- and for good reason! Research suggests that zinc can help control infections by slowing your immune system’s response, to in turn prevent damaging, out of control inflammation. 5 Tips For Staying Motivated

Well, what a month its been. I have hardly touched the sides of the Business Diploma I am committed too with Business Mamas and the guilt is setting in. I have every excuse in the book, I'm writing my next upcoming eBook, I have blog posts coming out of my ears, the kids have been sick, I've just found out we need to move sooner that we thought and I'm all round overwhelmed. That's being a mum though right? Life can send you curve balls and you just need to suck it up and get over that fence and keep going, keep striving and keep a smile on your face. I'm excited to do this course but finding it so hard to keep focused with so many other things going on around me. I'm not giving up though, far from it. I'm more motivated than ever, I know I can do this as I know I have a supportive environment around me from the business mamas team and my special business mama angel that keeps checking in to make sure everything ok. 

Here are my 5 tips I have set myself this weekend to get back on track and stay motivated:

1. Keep your goals front and centre, have them hanging in front of your face so they cannot be forgotten. 

2.  Utilise your business angel from business mamas. These lovely ladies are here for a reason to nurture us through the course and keep us at it. 

3. Set specific time slots and days for working on the course per week. Setting these times gives us no excuse to bow out of study. 

4. It's all about positivity. Keeping the "cant's" out and the "can's" in. Kicking out all the negative thoughts and actions about why I can't do something and just focusing on how I can. Instead of making excuses, just making an action plan to make more time. 

5. Acknowledge your accomplishments. Taking time to take pride and celebrate our wins will have us all wanting to achieve more. Anything that moves us forward to our goals is worth celebrating.
