RECIPE : Simple Coconut Yogurt

Simple Coconut yogurt
Coconut yogurt is one of those things that can be very expensive to buy but so simple to make. You will surprise yourself how fun it is culturing your own creations on your bench top too. It feels like one big science experiment.

2 young drinking coconuts
2 probiotic capsules
1 tbsp coconut nectar or honey (optional)
Clean glass jar with lid

Safely crack open your coconuts.
Using the back of a dessert spoon, scrape out all the coconut flesh and pop it in the food processor along with the coconut water from one of the coconuts. Keep the other coconut water for smoothies.
Whiz in the food processor until mixture is thick and creamy like a very thick coconut cream.
Transfer coconut cream into your clean glass jar*. Open the probiotic capsules with your fingers. Pour the probiotic powder straight into the cream and stir through the powder using a non-metal spoon, discarding the capsules.
Put the lid on the jar and sit it on the bench out of direct sunlight for 12 hours. You will see little bubbles forming in the mixture as it cultures.
After 12 hours, open up your jar and you will have natural sour coconut cream.
Eat it natural or add in your coconut nectar or honey giving it a good stir for sweetness.
Store in the fridge up to 4 days.

*Tip: To make sure your glass jar is clean, boil it in clean water for 10 minutes and air dry.
