RECIPE: Ham Eggy Cupcakes



Ingredients
10 eggs
10 pieces of sliced free-range ham 
fresh herbs, chopped finely
salt and pepper
coconut oil for greasing pan

Method
Preheat oven to 180 degrees.
In a greased muffin tin, place a piece of ham in each to make the cupcake liner.
Crack an egg into each space and sprinkle with salt, pepper and some fresh herbs.
Place tray into the oven and bake for 15-20 mins or until eggs are cooked.
Enjoy 1 as a snack and keep the rest in the fridge in an air tight container. They can also be frozen until needed.
