RECIPE – Savoury Slice… Recipe by Rikai

This great recipe is from a beautiful friend of mine. We were “first” friends, spending almost every waking hour together from when I was born, 9 months after… Dressing the same (I would call her every morning and ask her what she was going to wear and then wear the same), most people in town thought we were twins (Well I’m not sure if they did but I would pretend)… So many fun times and memories and now we have found the same healthy passion for amazing REAL FOOD! 

This recipe is not a quiche and its not a pie… its a slice and it is beautiful! When Rikai first sent me this protein packed recipe to try I thought it was super cool because you don’t see many savory slices around and this is so easy… Anyone can make it! 

500gms Almond Meal 
1 Egg
2 Tbsp of Olive Oil
Mix well. Pre heat oven to 180c. Place a sheet of baking paper in a large casserole dish, poor base onto paper and press in with your palm.
I use whatever vegetables I have in the fridge – pumpkin, sweet potato, broccoli, zucchini, tomato, basil leaves.
4 Eggs
Half a cup of coconut milk (dairy, goats or almond milk)
Goats Fetta
Steam the pumpkin and sweet potato until firm then place all the vegetables on top of the base.
Beat eggs and milk well in a separate bowl then poor mixture over the vegetable. Crumble goats feta over the top of slice. Place in oven for 30 minutes or until cooked through and golden brown.
Serve with a light salad.
Try and use organic where possible :  )
I cook this dish on a monday night with all our left over vegetables, it makes a great dinner and also great to have in the fridge for a meal on the run.
