RECIPE: Oat Cookies… Recipe by Emily Dryden

Another week, another recipe and this one comes from a mummy friend of mine, Emily, I met at mothers group just over a year ago. Being a young mum I wanted to know more young mums around the area so I started going to a young mums group in my area and I met an amazing group of ladies. It’s not often you can throw a group of girls together and everyone get along, but this group definitely has something special. All being relatively new mums, all being young-ish and all loving a night out of freedom dancing on tables, we have had lots of fun together. 
Emily is a true whole foods mum. Going through her own journey using natural therapies, she has done so much research into every angle; from foods and nutrition, laundry products, make up, skin care, the list is endless! She is dedicated to good, real food and only bringing her baby up with the best! She is a true inspiration and a great go to ask a question girl. Emily always has a good baby snack in her bag and this was her addition to play group last week so I nutted her out for the recipe to share with all of us. These really yummy, super healthy cookies are wheat and dairy free, naturally sweetened and packed full of goodness! ENJOY!


3 cups rolled oats
1 cup oatmeal (it sticks to the wet ingredients and helps to bind it all together)
1/2 cup sultanas
1/2 cup goji berries
1/2 cup chopped dried apricots or dried figs
1/4 cup sesame seeds
1/4 cup desiccated coconut
2 tbsp chia seeds 
1/2 – 3/4 cup coconut oil (melted)
1/2 – 3/4 cup honey or maple syrup
2 eggs


Simply mix all of the dry ingredients together then add the wet ingredients (adding more oil or honey if you think it needs help to stick together). Stir well before shaping into cookies and baking at 180 C for around 10 mins.
