Arghhh how excited I am to share this amazing and super simple recipe with you; it has been a chocolate filled day attempting to create the perfect recipe just for you to try this easter! My first attempt was terrible, 2nd attempt was a slight disaster but 3rd attempt was the perfection that I knew we could come up with… 3rd time lucky right???
This recipe is refined sugar free, dairy free and full of bite!
So here you have it; a delicious fool proof recipe for you to make in your Thermomix*… 

200 grams Cacao Butter
1 tsp liquid stevia (less or more depending on your proffered sweetness)
1 tsp vanilla bean powder or extract
Pinch of salt (or more if you like a salty choc)
50 grams roasted carob powder ( I use this one, its incredible!)
50 grams raw Cacao powder
1. Place cacao butter (roughly chopped) into mixing bowl and turn speed 7 for 10 seconds. Cacao butter should become very fine.
2. Melt cacao butter for 5 minutes/ 37 degrees/ Speed 1
then scrap down bowl with spatula and put on heat again for 5 minutes/ 37 degrees/ Speed 1
Check it and if its all melted then your good for the next step, if not then just repeat melting for another 5 mins.
3. Now add in your stevia, salt and vanilla and mix for 1 minute/ speed 1
4. Sift in your cacao and carob powder making sure there are no clumps then combine for 1 minute/ speed 1
5. Pour this delicious silky smooth chocolate into silicon chocolate moulds and leave to set in the fridge. AMAZING! So delicious! Add dried fruit or chopped nuts or keep it plain, whatever you desire!

 * If you don’t have a Thermomix, try it over the stove on very low heat and dont stop stirring. Have fun! x
