RECIPE: Coconut Cupcakes


These babies are a serious winner. They taste like a very mainstream vanilla cupcake; fluffy and sweet but they are made using mostly coconut products. Everyone that taste these cupcakes love them. You can keep them simple as muffins or cupcakes or make it into a cake. I am currently making 36 of these guys for a superhero party tomorrow; a farewell party for our kids with their best friends. 

Coconut
Muffins/Cupcakes
Ingredients
3/4 cup of coconut flour
6 eggs
1/2 cup coconut oil, melted
1/2 cup of coconut nectar or honey
1/4 cup coconut milk
1 tsp of baking soda
1 tsp vanilla 
Pinch sea salt 
Coconut flakes to decorate.
Directions
Preheat the oven to 180 degrees.
In a food processor place all wet ingredients and whiz until combined. 
Add in all the dry ingredients
and process again until mixture is well combined and smooth.
Separate mixture into cupcake
cases. 
Bake for 25 minutes or until
cooked through.
Let muffins cool and serve on
their own or with fresh coconut cream and strawberries.
