There is something special about laying your teeth into a small piece of fruity christmas delight. Growing up I was never a fan of fruit cake but as my taste buds have shifted and my kids LOVE all things fruit I have grown to love using fruit to sweeten my baking and been really happy with the results. Every year, I have wanted to share with you a healthy christmas cake recipe but have always run out of time to get one up here. This year though, as we are an official GAPS family I thought it was definitely time I pull my finger out and create a fruit cake recipe that my little family can enjoy on the big day after our big christmas meal. You can’t have a party without cake right? And christmas is the biggest party of the year! This cake is great for many people with intolerance’s and allergies as long as they can eat eggs and can tolerate some fruit. Its grain free, gluten free, dairy free, GAPS friendly, and nut free if you choose not to dress it up with almonds as I have in the pics above. Its full to the brim with dried fruit so it contains natural sugars but its definitely a greater, healthy alternative to the pre made packaged cakes, its really simple to make and tastes delicious if I do say so myself. A Healthy Christmas Cake
1 orange, peeled
1 tsp cinnamon
1/2 tsp nutmeg
3/4 tsp ginger
2 tsp vanilla bean powder
1 tsp baking powder
3/4 cup coconut flour
1/2 cup coconut oil , melted
600 grams mixed dried fruit
1. Preheat oven to 150 degrees.
2. Place the eggs and orange in the food processor and process until smooth and eggs are a little fluffy.
3. add in the cinnamon, nutmeg, ginger, vanilla, salt, baking powder, coconut flour and coconut oil and mix until all combined well.
4. Transfer all of mixture to a large mixing bowl and add in the mixed dried fruit. Give it a good mix with a big spoon to make sure all the dried fruit is covered with cake mixture and all ingredients and combined.
5. Pour mixture into a greased and lined medium sized round cake tin. Its a really thick mixture so flatten out smoothly with the back of a spoon. Pretty your cake up with blanched almonds as I have done in the pictures above or leave it plain, its up to you. Pop into the oven and bake for 50 mins – 1 hour or until golden brown in the top and cake is cooked through. Just check by sticking a skewer through the centre of the cake and if it comes out clean, its ready.
6. Enjoy as a christmas treat or wrap in celo and gift to a loved one.
